I’m not vegan, nor do I have celiac disease, but I do try to stay away from dairy as much as possible (especially if the alternative is Daiya), and I’m always trying gluten-free foods when I can. This macaroni was on sale, and I adore the shit out of Amy’s, so I figured I’d give it a try.
Given the fact that I’d barely eaten all day, I didn’t have the patience to cook this in the oven, although I’m sure the end result would’ve been way more awesome. Microwaves suck, but they can be quite convenient. If I get the chance to buy this again, I’ll probably bake it.
In my experience, rice noodles tend to make certain dishes taste a bit weird. The texture is a bit different from semolina noodles, and sometimes, that can kind of make or break a meal. As far as this macaroni goes, the noodles are totally fine. It’s creamy, cheesey, and totally better than Kraft macaroni. It’s like restaurant macaroni (and yes, that really is a thing). Thanks to Daiya, vegan macaroni no longer has to suck.
This macaroni is almost too creamy for me, personally, but it’s delicious, and therefore, I think that for a frozen dish, it deserves a 5/5, and I’ll definitely buy it again (if I ever have the money or find it on sale).
